The Plant
Backhousia citriodora (Lemon Myrtle) also known as ‘lemon-scented myrtle’ or ‘Lemon Ironwood’. It is naturally found in the subtropical and tropical rainforests of coastal Queensland and New South Wales, Australia. It grows to between 3 and 8m in height with light to dark green strongly aromatic lemon-scented leaves. 

Lemon Myrtle can be used to enjoy tea even blending with black, green or other herbal teas.  It’s wonderful flavour profile also lends itself well to enhancing culinary dishes. 

The range of uses includes Lemon Myrtle in shortbread; flavouring in pasta; whole leaf with baked fish; infused in macadamia or vegetable oils and as a seasoning for food products.

It can also be used as a lemon flavour replacement in milk-based foods, such as cheesecake, lemon flavoured ice cream and sorbet without the curdling problem associated with lemon fruit acidity

Lemon Myrtle is also known for its high Citral content, approx. 98%
